PENGARUH LAMA PENYIMPANAN PADA SUHU 3-4°C TERHADAP KADAR PROTEIN PADA ASI (AIR SUSU IBU) DENGAN METODE BIURET SECARA SPEKTROFOTOMETRI

Abstract

Breast milk is the ideal source of nutrition with a balanced composition for the growth and development of infants. To meet the nutrition of infants, the World Health Organization (WHO) recommends that newborns are exclusively breastfed for 6 months. It is difficult for mothers who have jobs outside the home because of time constraints for bonding directly. ASI with specific storage temperature is the best way to maintain nutritional quality. Breast milk storage should be concerned about the quality of nutrition in breast milk, one of which is a protein. The purpose of this study was conducted to determine the effect of storage time at a temperature of 3-4 ° C the protein content in the milk was analyzed using biuret method by spectrophotometry.

            This research uses experimental methods with quantitative analysis techniques. The parameters measured were the storage time variation of ASI, 0 days as the control. Further samples were stored in a refrigerator at 3-4oC temperature for 1 day, 2 days, 3 days, 4 days to 5 days. Then analyzed the protein content using the biuret method by spectrophotometry.The results of the study, the average protein content on day 0 of 3.061 mg / ml. While the average protein content in milk with 3-4oC temperature storage treatment on day 1 to day 5 are respectively 3.059 mg / ml, 3.018 mg / ml, 3.07 mg / ml, 3.063 mg / ml and 3.065 mg / ml. While the results of statistical tests performed can be concluded that there is no significant effect of storage time on the protein content in milk.
