Abstract

Processing of salted fish is an attempt to extend the shelf life of fish by adding salt and then dried. The problem of this research is the use of newsprint and water in the process of soaking salted fish that can harm consumers because the chemicals contained in the ink contained in the newspaper contain elements that can cause cancer. Lead contained in the newspaper ink will be able to enter into the salted fish through the process of diffusion. The purpose of this research is to know the effect of salted fish immersion wrapped in newsprint on lead content (Pb) of salted fish in using newspaper wrap. This type of research is an experimental study. Population and samples are taken from Driyorejo Gresik market. Samples of fish taken in large sized fish and medium size meat. From salted fish traders in the market of Driyo Gresik fulfill the criteria to be sampled, The result of the research shows that average of lead water content in salted fish immersion wrapped in newspaper is 0,0425 ppm while salted fish is not 0,127 ppm. So it can be concluded, submersion of newsprint there is solubility of lead in salt water immersion fish.
