ANALISA KADAR KALSIUM PADA LEGEN (NIRA) SEBELUM DAN SESUDAH PENYIMPANAN SECARA KOMPLEKSOMETRI

Abstract

Indonesia is a rich country in plants, which one is siwalan tree. Siwalan or
lontar trees (Borassus flabellifer Linn) is one type of palma that grows in lowland
and upland areas. One of the main products of siwalan tree or papyrus is legen
(nira) which is tapped from the flower. Legen (nira) can be drunk directly or can
also be stored a day overnight which will turn into intoxicating wine.
Legen (nira) produced by siwalan trees has a calcium content. Not only
legen (nira) which contains calcium, tuak also has a calcium content that is not
inferior to the legend (nira). Besides calcium, legen (nira) and tuak also have
other content such as sugar, protein, etc. Calcium is an inorganic compound
needed by the body. Some of the benefits of calcium for the body include: blood
circulation, flexing muscles, normalize blood pressure, overcome cramps,
lumbago. In addition, the role of calcium in the body is generally divided into 2,
namely: helps form bones and teeth, and measure the biological processes in the
body.
In this study, the authors used a method of titration of complexometry by
using Legen test material (nira) before storage and legen (nira) after storage that
has been turned into palm wine. Tuak is analyzed for calcium levels starting from
the first day of storage until the third day of storage.
The result of the research showed that the influence of storage time can
increase the level of calcium contained in legen (nira) to become tuak. The results
obtained in this calcium concentration analysis were 18.4 mg/l in legen (nira),
20.608 mg/l, 25.76 mg/l, and 29.94 mg/l in tuak in the first day storage until day
storage third.
