PENGARUH LAMA PENYIMPANAN SUSU KEDELAI PADA SUHU KULKAS TERHADAP CEMARAN BAKTERI Coliform DENGAN MENGGUNAKAN METODE MPN

Abstrak

Soy milk is one of the soybean processed products that have low shelf life, therefore to know the effect of storage duration of soy milk at refrigerator temperature to Coliform bacteria contamination and to know the good storage time of soy milk at refrigerator temperature. The research was conducted using MPN method which included the prediction test on LB 1 and LB 2 media, assay test on BGLB media, and complementary test on EMB media, previously soybean milk was stored for 0, 1, 2, 3, 4, 5, 6, the day at refrigerator temperature 1 – 4oC. The result showed that Coliform bacteria contamination but until the 4th day the amount of Coliform bacteria contamination still fulfill stand of APM Coliform 20 / ml specified in Standard National Indonesian (SNI 7388: 2009) while on day 5 and day 6 Coliform bacteria contamination is not meet the standard APM Coliform 20 / ml specified in the Standard National Indonesian (SNI 7388: 2009) and from complementary test on EMB media found adannya contamination of Escherichia coli bacteria. From result of research which have been done to soybean milk which have been treated with long storage 0, 1, 2, 3, 4, 5, 6 day at refrigerator temperature, hence can be concluded that long storage influence to growth of Coliform bacteria in soybean milk at the refregeneration temperature and the maximum time limit for storage of good soy milk is less that 4 days.
