DETEKSI CEMARAN BAKTERI COLIFORM PADA SAMPEL CINCAU HITAM DENGAN VARIASI LAMA WAKTU PENYIMPANAN

Abstrak

Coliform bacteria is a normal flora in the human intestine and will cause disease if it enters other organs or tissues. This bacterium is easily spread by polluting the water and contaminating materials that come into contact with it. If you find this bacterial contamination in a food, it is an indication that the food has been contaminated by human waste. This can occur in market snacks such as black grass jelly. The purpose of this study was to determine whether there was any influence of the variation of refrigerator temperature storage time on coliform bacteria contamination, and to find out the maximum storage time according to SNI 7388-2009. This research is an experimental laboratory research using a completely randomized design, the method of MPN (most probable number) variance 5 1 1 is identification is done after being treated in the form of variations in storage time on day 0 to day 4 then see the existing gas on LB AND BGLB media and matched into MPN table and continued planting on EMB media to see the presence of metallic green colonies. The results of the study found that there was contamination of coliform bacteria but no Eschericia coli bacteria were found. The growth of coliform bacteria in black grass jelly from day 0 to day 4 has exceeded the limit of SNI 7388-2009. So that the black grass jelly bought from the traditional market Sits Sampeyan Gresik is contaminated with the presence of coliform bacteria and the longer the time to store grass jelly in the refrigerator, the higher the growth of coliform bacteria.
