ANALISA CEMARAN BAKTERI Coliform PADA SUSU SAPI MURNI DENGAN VARIASI LAMA PENYIMPANAN DALAM SUHU FREZER DAN SUHU KULKAS DI DESA WILAYUT SUKODONO SIDOARJO

Abstrak

Pure cow milk is milk that directly milk from cows' gont and not through any treatment so has low shelf life, therefore to know the effect of duration and temperature of pure cow milk storage at refrigerator temperature and frezer temperature to coliform bacteria contamination and to know the old and good storage temperature in pure cow milk at refrigerator temperature and frezer temperature. The research was conducted using MPN method which included the prediction test on LB 1 and LB 2 media, assay test on BGLB media, and complementary test on EMB media, previously pure cow's milk was stored at refrigerator temperature and frezer temperature for 0 days and 1 day. The result showed Coliform bacteria contamination but at less than 24 hours frezer temperature, the amount of Coliform bacteria contamination still fulfill the standard specified in Indonesian National Standard (SNI 7388: 2009) while at storage temperature of Coliform bacteria contamination refrigerator has not fulfill the standard specified in the Indonesian National Standard (SNI 7388: 2009). From the complementary test on EMB media found the contamination of Escherichia coliditandai bacteria with metallic green colony color. From the results of research that have been done on pure cow milk that have been given a long treatment of storage for 0 days and 1 day at refrigerator temperature and frezer temperature, it can be concluded that the storage time at refrigerator temperature and frezer temperature effect on the growth of Coliform bacteria in pure cow milk, where good storage is at a frezer temperature for less than 24 hours.
